Cooking for July: suggestions? |

I've read in several pregnancy books and magazines that it's a good idea to prepare meals before the baby arrives and freeze them so that you don't have to worry about cooking when you get back from the hospital. We've started doing this. So far my mom made Boeuf provencal when she was here, and I've prepared pork loin in mustard sauce, a large tray of lasagna (it might last us a week!), and lentil with ginger soup. Next week's dishes will probably be quiche (one spinach, one ham and cheese).
Does anyone have any suggestions for easy to freeze meals? Especially vegetable dishes? Or meat and vegetable dishes? Thanks in advance!

Soups are great. Lasagna works pretty well, too, if you wrap the top well, and that can be veggie or meat. I could send you a good recipe for a veggie one if you want.

My mother made us turkey meatballs and chicken cutlet for our freezer. Let me know if you'd like the recipes. It sounds like you're in good shape though!
I've had good luck with freezing pesto, which makes a nice fresh meal if you toss it with some pasta, grape tomatoes and little pieces of fresh mozerella or provolone... not too much fuss.
Not quite as economical but here there are quite a few nice organic dinners you can get frozen ranging from cheese enchilada's (also a nice dish to freeze on your own) to palak paneer (might've missed spelled that, but love it anyhow *grin*).
I've also forzen a vegetable rice mixture (rice cooked with chicken flavored bouillon, tomatoes, black beans, corn, red onions) then I warm it in the micorwave spoon it in zuchini halves pop them in the microwave and then top it with some grated cheese.... never tried freezing the zuchini though... not sure what it would do to the texture. Okay I'm getting tired enough I'm typing inverted and bckwards and upwards, so I'll wrap it up :)

Cool, ideas from a goddess/superhero, a fairy and a sentient plant/dragon! Thanks for the advice! Any recipes are welcome -- even if I don't use them now, I'm sure I will in the fall!
